Baked Greek Lamb


Greek Lamb Ingredients:
  • One leg of lamb
  • 2 tins peeled tomatoes
  • 2 tablespoons of tomato puree
  • 1 tablespoon of sugar
  • 1 tomato can of water
  • 1/2 block of fetta cheese
  • One generous 'handful' of black olives
  • 1 tablespoon of olive oil
  • Attiki dried oregano - preferable imported from Greece
  • black pepper and salt
Spike the leg of lamb generously with garlic

Place leg in pan and surround with peeled tomatoes, the tomato puree, the water and the sugar. Crumble up the fetta and place in pan with the lamb and add the black olives.

Pour the olive oil over to lamb and sprinkle with the oregano (crushed), black pepper and salt. Place in a hot oven (180 degrees C) and cook slowly for an hour.

Check that the lamb is 'well' cooked and that the sauce is thickening and reducing slowly during the cooking.

Vegetables

Prepare potato, pumpkin, carrots and sweet potato in the usual manner and cook with the lamb in the roasting pan.

When cooked, take lamb from the pan and slice onto centre of a large serving platter. Place vegetables around the meat and pour sauce from the pan over the whole for presentation effect. (Garnish with fresh herbs.)

Serve with a green salad, a bowl of tsaziki (yoghurt and sliced cucumber with oil, lemon and salt and pepper to taste) and a fanfare of Greek trumpets.
