French Creme Caramel
Grease tins or moulds: either
- half a dozen small tins/moulds
- one large cake tin (round)
Prepare caramelised 'topping'
'Caramelise' half a cup of sugar (no liquid) by warming/heating on a light gas/electric ring 'til liquid and light brown.
Pour into greased tin[s] or mould[s]
Bowl 1
Stir together four eggs, one teaspoon of vanilla, one cup of sugar.
Bowl 2
Stir together 2 cups of powdered milk (full cream or skimmed or whatever proportion you like) with three cups of water.
Strain contents of bowl 2 into bowl 1 - fold
Pour combined mixture into the greased tin[s] or mould[s] already layered with the caramelised sugar.
Bake in a dish (baking tray) of water for 45 minutes or longer until 'set' at
300-350 degrees F or 150-180 degrees C depending on the "heat" of the oven - tester will come out 'clean'. Not too high in the oven otherwise top may toughen or burn.
When cold turn onto a serving dish (in the case of the single mould) or onto the desert plates (in the case of the individual moulds).
