Mother's Christmas Cake
1/2 lb each of sultanas, currants and raisins plus 2 oz each of peel and cherries
OR 1 lb 12 oz mixed dried fruit
2 oz blanched almonds
Soak fruit and almonds overnight in 6 or 7 tablespoons of rum.
1/2 lb butter
1/2 lb brown sugar
5 eggs (8 bantam eggs)
Cream butter and sugar and add eggs one at a time beating well.
10 oz plain flour
Add flour and fruit mix into the cake mix bit at a time until mixed thoroughly. Place into 8" square tin lined with aluminium foil.
Cook in pre warmed electric oven for 2 1/2 hr + according to the following:
150 degree C 1/2 hour
140 degree C 1/2 hour
130 degree C 1/2 hour
120 degree C 1 hour + until cooked
[For gas stoves temperature range is 100 degrees to 140 degrees C, or 250-300F]
Test with straw or thin skewer
Do not open oven door for at least one hour.
Once removed from the oven, immediately sprinkle three or four tablespoonfuls of rum over the cake. Leave in tin until cold.
