Mum's Bar Cakes

Ingredients:

4 ounces (250g) butter
6 ounces caster sugar
One - two Egg
8 ounces self raising flour
1/2 cup of milk
1/2 teaspoon baking soda

Beat all the ingredients together for three minutes

Pour into a greased rectangular cake tin

Place into oven at 200°C (350°F) for 35 minutes or until it tests "cooked"

Remove from oven - empty onto stand till cool.

For a long keeping "Banana Cake" version of this recipe, use two "soft" bananas (mashed) instead of the milk and baking soda

For a beaut "Orange Cake", use grated rind and 1/2 cup of juice instead of the milk etc.

Feel free to experiment with other "flavours".

This cake keeps well in the freezer.
